Ingredients |
| 1 1/2 cups shredded zucchini
2 cups whole-grain flour
1 teaspoon cinnamon
1 teaspoon allspice
2 eggs
3/4 cup brown sugar
1/4 cup unsweetened applesauce
2 teaspoons fresh lemon juice

Method |
|
Preheat oven to 180C. Wash and shred zucchini.
In a large bowl mix flour with spices and add eggs brown sugar applesauce and lemon juice (do not overmix).
Fill 12 cup muffin tin with mixture.
Bake 15 minutes or until golden brown remove from tin and cool on wire rack.
